Miso Cod


Serves 4

Marinade:
-1/4 cup of white miso
-1/4 cup mirin- optional, if you don't have it, don't fret it
-2 tablespoons rice Vinegar
-1 teaspoon Siracha 
-1 teaspoon fresh ginger
-2 tablespoons cilantro chopped
-1/3 cup coconut milk- soaking cod and other lean fish in milk makes it milder and more tender. The coconut adds great flavor as well.

-2 lbs white cod



Preheat the oven to 400 degrees F.
In a bowl, whisk the first four ingredients together until smooth. Add ginger, cilantro and milk.
Pour over cod and place in the fridge for 20 minutes. Remove and let sit for 10 minutes.


Place cod in oven and cook for 10 minutes. Remove and serve.
